The Babo scale (or Degree Babo) is a measurement used mainly in viticulture and in the production of alcoholic beverages to determine the concentration of sugar in musts (liquid obtained from pressing fruit, such as grapes, for wine production). The Babo scale 0-36º indicates the density of the liquid, which is directly related to the amount of sugar present in the must. The higher the value on the scale, the higher the sugar concentration, which indicates a greater potential for alcohol production during fermentation.
Specifically, the 0-36º Babo range allows us to estimate the probable alcohol content that can be obtained from the fermentation of the sugars in the must.
The Probable Alcohol scale 0-17º refers to the estimate of the final alcohol content that a beverage, such as wine, may reach after the complete fermentation of the must (sugary liquid extracted from fruits, such as grapes).
It indicates, in percentage by volume (°), the probable amount of alcohol that will be obtained after the conversion of the sugars present in the must into alcohol. For example, if the mostometer shows a value of 12º on the probable alcohol scale, the final product, after fermentation, is expected to have approximately 12% alcohol. The range of 0-17º covers most wines and other fermented beverages.
